Zubrowka vodka is a traditional Polish vodka made from rye and infused with bison grass, a unique type of grass that grows in the Białowieża Forest in Eastern Europe. The bison grass gives the vodka its distinctive aroma and flavour, which is both herbaceous and slightly sweet. To make Zubrowka vodka, the rye grain is fermented and then distilled, before being blended with a tincture of bison grass. This tincture is made by steeping dried bison grass in a high-proof spirit, which extracts the flavor and aroma compounds from the plant. The resulting vodka is then bottled and sold, usually at around 40% alcohol by volume (ABV). In Poland, Zubrowka is often served chilled and neat, with a small piece of apple as a garnish. This is known as a Zubrowka z jabłkiem (Zubrowka with an apple) and is a popular way to enjoy the unique flavor of the vodka. Zubrowka can also be used in cocktails, such as the classic Polish drink called the Tatanka, which is made by mixing Zubrowka with apple juice.
